Fried Rice ~ Kid Friendly ~

~ Super Easy, Kid Friendly ~

Serves 4-6

 
 

Ingredients:

2 Cups White Rice

3 Cloves of Garlic

~ 1 Teaspoon Ginger (Fresh if available)

~ 1 Teaspoon of Salt

2 Heads of Broccoli 

1 Bag of Mixed Frozen Veggies

~ 1 Cup Peanut Butter

~ 1/2 Cup of Liquid Aminos or Soy Sauce 

~ 1 Cup Vegetable Oil =

 

Instructions:

Cook rice and set aside.

Saute minced garlic for about 1 minute before adding bite size broccoli to the pan. Add a bit of water and cover to steam. 

Once the broccoli is soft, add salt, ginger and frozen veggies to the pan and steam for 3-4 minutes. 

Mix the sauce together: peanut butter, liquid aminos, and vegetable oil until it is smooth and homogenous. 

Combine all ingredients and “fry” on medium heat for ~ 15 minutes. Turning over occasionally. 

 
 

**For additional flavor, mix a second batch of Sauce or add chili paste to the sauce. 

Not the healthiest of meals but it is so filling, keeps in the fridge well and it is affordable!
